Banitsa with spinach
Ingredients: 1kg flour, 1 kg spinach, 300gr white brined cheese, 1 1/2 cup of yogurt, 200gr butter, one spoon sunflower oil, one spoonful vinegar, pinch of salt.
Fry the cleaned and chopped spinach in some of the butter for no more than five minutes. Then let it cool and mix it with the crumbled cheese and yogurt. Knead a hard dough from the flour, oil, vinegar, salt and water. Roll the dough into five sheets (1 kg of ready rolled pastry sheets may also be used). Butter a baking dish, place a sheet on the bottom and spread a layer of the mixture, and continue alternating layers so that the dough sheets and the mixture are finished about the same time. Sprinkle the uppermost pastry sheet with melted butter. Bake in a moderate oven. The same recipe may be used for making banitsa with leeks.
